Parmesan Roasted Potatoes

Perk up standard roasted potatoes by tossing in some fresh thyme and grated Parmesan. They’re delicious at room temperature, making them perfect for a buffet or as an unexpected hors d’oeuvre, served with pesto for dipping.

Ingredients

  • 2 pounds medium red potatoes, cut into 1-inch pieces
  • 8 sprigs fresh thyme
  • 1 cup grated Parmesan (4 ounces)
  • 1/4 cup olive oil
  • Kosher salt and black pepper

Preparation

Step 1

Heat oven to 400° F. In a large roasting pan, toss the potatoes, thyme, Parmesan, oil, 1 teaspoon salt, and ¼ teaspoon pepper.
Roast, stirring once, until golden brown and crisp, 45 to 50 minutes.
