Spinach Salad

  • 2 minced shallots
  • 2 Tbs. Dijon mustard
  • 2 ½ Tbs. red wine vinegar
  • 1/8 tsp. freshly ground pepper
  • ½ cup extra virgin olive oil
  • ½ lb. bacon
  • ½ loaf day old French bread, cubed
  • Baby spinach, washed
  • Crumbled Feta cheese
  • black olives
  • Sliced hard boiled egg
  • Sliced mushrooms



Step 1

Whisk together shallots, mustard, vinegar and pepper, add olive oil in a stream. Set aside. Cook bacon in frying pan until crisp. Drain on paper towels and add bread cubes to bacon drippings. Sauté until lightly browned, remove and set aside. Crumble bacon and return bacon to pan, remove from heat and add dressing. Pour dressing over spinach, top with cheese, olives, egg and mushrooms.
