Ingredients

    cup couscous, cooked according to the package directions

  • 4

    ounces Feta, crumbled

  • ½

    cup chopped roasted red bell peppers

  • ½

    cup cup fresh mint leaves

  • 1

    tablespoon olive oil

  • kosher salt and black pepper

Directions

Let the couscous cool. Fold in the Feta, red peppers, mint, oil, salt, and pepper.
