Royal Icing -Lace Pieces

Ingredients

  • 4 egg whites
  • 800 - 900 grams icing sugar, sifted
  • One half tsp. cream of tartar or gum arabic

Preparation

Step 1

Add cream of tartar to egg whites. Beat until foamy. Gradually add sifted icing sugar. Beat after each addition.

If you add the icing sugar too quickly, the icing will be dense, heavy, and difficult to work with. You will add only enough icing sugar to mae a royal icing with stiff peaks.

Store at room temperature in an airtight, grease free container.
