Corn Bread of Life

Ingredients

  • 2 cups yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 large egg, beaten
  • 1 1/2 cups whole milk
  • 3 tablespoons lard or vegetable shortening

Preparation

Step 1

Preheat oven to 400 degrees.

In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar. Add the egg and milk and mix well, but do not beat. Heat the lard in a 10-inch ovenproof skillet, preferrably cast iron, over medium-high heat until almost smoking. Pour the batter and cook until the edges begin to turn golden, 3 to 4 minutes.

Transfer the skillet to the oven and bake until the corn bread is golden brown, about 45 minutes. Remove from the oven and let cool for about 5 minutes before cutting into wedges to serve.
