Sweet-and-Sour Pork Roast

Ingredients

  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1 (2-pound) boneless center-cut single pork loin

Preparation

Step 1

Preheat the oven to 375 degrees. Coat a medium roasting pan with cooking spray.

In a medium bowl, combine the honey, mustard, and salt. Place the pork in the roasting pan and coat completely with the honey mixture.

Cover the pork with aluminum foil and roast for 30 minutes. Uncover and baste with the pan drippings.

Roast the pork uncovered for 15 to 20 more minutes, or until no pink remains. Slice and serve with the pan drippings.

Note: With well-trimmed pork loin being so low in fat -- as low as chicken breast, and with even less cholesterol! - don't forget about "the other white meat" for a change of pace.
