Ingredients
- Cooking Spray
- 1/3 C sliced scallions
- 4 C low-fat chicken broth
- 2 C cooked rice
- 1 can undrained diced tomatoes with green chiles
- 1 C cooked chicken breast, cut in cubes
- 1 can (4 oz.) chopped green chiles, undrained
- 1 T lime juice
- Salt to taste
- Tortilla chips
- avocado cubes, cubed Monterey Jack cheese, fresh cilantro for toppings, and a slice of lime and tortilla chips to serve alongside.
Preparation
Step 1
Heat a soup pot coated with cooking spray over medium high heat until hot. Add scallions, cook and stir until tender. Add broth, rice, tomatoes,lchicken and green chiles. Reduce heat to low and cover to simmer approximately 15 to 20 minutes. Stir in lime juice and salt. Just before serving top the bowls of soup with tortilla chips, avocado, cheese, a sprig of fresh cilantro, and tortilla chips.
