Ingredients
- 1/2 ½ lb. ground pork
- 2 tbs. bread crumbs
- 2 oz. grated cheese
- Salt and pepper
- 1 tbs. parsley, minced
- 1 clove garlic
- 1 egg
- 8 artichokes, outer leaves removed
- Juice of 1 lemon
- 2 tbs. olive oil
Preparation
Step 1
Combine the pork, bread crumbs, cheese, salt, pepper, parsley, garlic, and egg until the mixture is homogeneous. Preheat oven to 300 degrees.
Remove the fuzzy inner choke from each artichoke, trim the stem and place immediately in a bowl of cool water and lemon juice. Remove the artichokes from the water and fill with the pork mixture.
Arrange the artichokes in a baking dish; drizzle with the olive oil, pout in ½ cup water and bake for 30 minutes, basting every 5 minutes with the cooking juice to prevent the artichokes from drying out. Serve hot.
