Sweet Pepper Pork

Ingredients
- 4 boneless pork chops
- 2 T. olive oil
- 3 cloves minced garlic
- 1/2 red onion, sliced
- 3-4 aneheim green chilis, seeded and sliced into strips
- 1 green bell pepper, seeded and cut into strips
- 1 yellow bell pepper, seeded and cut into strips
- 1 red bell pepper, seeded and cut into strips
- 2 T. green chili powder
- 1 T. cumin
- salt and pepper to taste
- Juice of one lime
- 1 large can diced tomatoes
- 1 T. cilantro

Preparation
Step 1
In a large pan, saute onions and garlic in olive oil for about 1 minute over medium high heat. Add pork chops seasoned with salt and pepper, green chili powder, and cumin. Cook for about 2 minutes on each side to brown. Add chili and pepper strips and continue to saute, stirring to get peppers cooked about 2 more minutes. Add lime juice and use a spatula to scrape bottom of pan. Add tomatoes and cilantro. Stir, then cover and let cook on medium low heat for about 20 minutes.
