Spaghetti w/ Sauteed leeks, white beans, and walnuts

Ingredients

  • 3 Medium Leeks, white and green parts chopped
  • 1 Tbsp Olive Oil
  • 1 yellow pepper
  • 1/4 tsp red pepper flakes
  • 1 15oz can cannellini beans, rinsed and drained
  • 1 cup veggie broth
  • 3 cloves garlic, minced
  • 12 oz spaghetti
  • 1/3 cup chopped, toasted walnuts

Preparation

Step 1

1. Heat oil in large saucepan over medium-high heat. Add leeks, peppers, and red pepper flakes: saute 10 minutes or until browned. Stir in beans, broth, and garlic. Reduce heat to low, simmer 5 minutes. Season with salt & pepper.

2. Toss in pasta until coated.
