Marlene's Cornmeal Crusted Fried Catfish with Homemade Tarar Sauce

Ingredients

  • Cornmeal-Crusted Fish:
  • 6 tablespoons cornmeal
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon Old Bay seasoning
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon red pepper flakes
  • 1/4 cup low-fat milk
  • 1 1/4 pounds catfish fillets, cut into 4 pieces
  • Homemade Tartar Sauce:
  • 3 tablespoons light mayonnaise
  • 3 tablespoons nonfat plain yogurt
  • 1 tablespoon finely minced onion
  • 1 teaspoon sweet or dill pickle relish
  • 1 teaspoon granulated sugar

Preparation

Step 1

1. Preheat the oven to 450 degrees. Spray a baking sheet with cooking spray.

2. In a shallow flat bowl, combine the cornmeal, flour, Old Bay, thyme, and red pepper flakes.

3. Dip the fish pieces in the milk and roll in the crumb mixture, pressing to coat. Place the fish on a baking sheet and cook for 12 to 14 minutes, turning once halfway through, or until fish is golden brown and flakes easily when tested with a fork.

4. While the fish is cooking, combien the mayonnaise, yogurt, onion, pickle relish, and sugar. Serve fish with tartar sauce.
