Ingredients

  • 1 (2-pound) pork tenderloin, trimmed, rinsed, and patted dry
  • 1 cup diet root beer
  • 1 1/4 cups barbecue sauce

Preparation

Step 1

Coat a medium nonstick skillet with cooking spray. Over medium-high heat, brown tenderloin on all sides. Pour root beer into a 4- to 5-quart slow cooker. Add tenderloin and pour barbecue sauce on top. Cook on LOW 4 to 6 hours, or until pork shreds easily.

Notes:
To make your own low-carb barbecue sauce, whisk together 1/2 cup reduced-sugar ketchup, 1/4 cup cider vinegar, 1 tablespoon molasses, and 1 teaspoon dry barbecue seasoning mix. Store in refrigerator until ready to use.

Makes 3/4 cup.
