Ingredients
- ¼ cup grainy Dijon mustard
- ¼ cup horseradish
- 2 T garlic, minced
- 1 T fresh thyme leaves, chopped
- 2 tsp pepper, coarsely ground
- 2 tsp salt, coarsely ground or to taste
- 3 T olive oil

Step 1
Preheat oven to 450. In a small bowl, mix all the ingredients with a whisk. Season the meat slightly with salt and roast for 20 minutes. Reduce heat to 350 and remove heat from oven. Brush the meat with mustard dressing and roast until medium rare. Remember to turn the pan a few times for even browning.
Tips: Always let the roast rest under foil for about 20 minutes before carving. This keeps the juices in the meat and not on the carving board.
