Ingredients

  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 6 tablespoons (3/4 stick) butter
  • 2 cups grated cheddar cheese (6 oz.)
  • 2 eggs
  • 1 1/2 cup buttermilk

Preparation

Step 1

preheat oven to 350@. Grease 1 1/2 qt. 3" deep round
baking dish.
Mix flour, baking powder, salt and baking soda in lg. bowl.
Cut in butter until mixture resembles coarse meal. Stir
in grated cheese.

Beat eggs to blend in medium bowl; reserve 1 tablespoon
for glazing bread. Blend buttermilk into beaten eggs. Stir
into flour mixture; dough will be sticky. Turn out onto
lightly floured surface and knead until blended, 2-3 min.
Shape into round and fit into prepared dish. Cut 1/4"
deep cross in center of dough. Brush with reserved egg.
Bake until tester inserted in center of bread comes out clean,, about 75 minutes. Cool in pan on rack 15 min.
Invert onto rack and cool.

For variations, substitute 1 1/2 c. chopped onions for cheese. Wrap onions in paper towels and squeeze, then set out on dry paper towels until no more moisture is
exuded

For topping, melt 1 tablespoon butter in heavy small skillet. Saute 3 onion slices until tender. Drain and arrange on top of dough and bake.
