Ingredients
- 1 lb ground beef
- 1 large onion, chopped
- 2 c salsa
- 1 15oz can black beans, drained, rinsed
- 1/4 cup zesty Italian dressing
- 2 tbsp taco seasoning mix
- 6 8in flour tortillas
- 1 c sour cream
- 2 c Mexican style four cheese
- cilantro (optional)
Preparation
Step 1
Line 13x9 baking dish w/foil, w/ends of foil extending over sides of dish; set aside. Brown meat w/onions in large skillet on med-high heat; drain. Add salsa, beans, dressing and chili powder; mix well.
Arrange 3 of the tortillas in single layer on bottom of prepared baking dish, cover w/ layers of half each of the meat mixture, sour cream and cheese. Repeat all layers. Cover w/foil.
Preheat over to 400. Bake, covered 30 min. Remove foil. Bake an additional 10 min or until casserole is heated through and cheese is melted. Let stand 5 min before cutting to serve.
Top w/ chopped tomatoes, shredded lettuce and chopped cilantro.
Cook later: freeze assembled uncooked casserole for up to 3 months. Preheat over to 400. Bake, covered 1 hour. Remove foil. Bake an additional 15-20 min or until casserole is heated through and cheese is melted. Let stand 5 min before cutting to serve.
