Quick Lemon-Broccoli Rice

  • 1 can 10 1/2 oz. chicken broth
  • 1 cup small broccoli flowerets
  • 1 small carrot, shredded
  • 1 1/4 cups uncooked instant rice
  • 2 tsp. lemon juice
  • pepper to taste


Servings 4


Step 1

In a medium saucepan over high heat, heat broth to a boil. Add broccoli and carrot. Reduce heat to low. Cover and cook 5 minutes or until vegetables are tender. Stir in rice, lemon juice and pepper. Cover and remove from heat. Let stand 5 minutes. fluff ricewith fork.
