Ingredients
- 2 lbs. strawberries, washed and hulled
- 3 cups sugar
- ¼ cup lemon juice

Step 1
Place the berries and sugar in a bowl. Cover and chill 4-8 hours. Remove the berries and place in a heavy pot and add the lemon juice. Bring the mixture to a boil, skim off the foam and cook until the mixture reaches the jellying point (220 degrees).
Pour mixture in a bowl and cook. Cover and chill overnight. The next day, reheat the mixture until boiling, then pour into jars.
