Mississippi Mud Cake

Ingredients

  • Frosting:
  • 1 Cup butter
  • 4 eggs
  • 1 Cup coconut
  • 2 Cups sugar
  • 1½ Cup flour
  • 1/3 Cup cocoa
  • 1 Teaspoon vanilla
  • 1 Cup chopped walnuts
  • 13Oz jar of marshmallow cream
  • ½ Cup butter
  • 6 Tablespoons milk
  • 1/3 Cup cocoa
  • 1 Pound box confectioner's sugar

Preparation

Step 1

Beat butter in large bowl. Add eggs beating well. Add coconut, sugar, flour, cocoa, vanilla & nuts. Stir until blended. (Don't beat) Spread into greased 9x13x2 inch pan. Bake at 350°F for 45 minutes.
When done spread marshmallow cream on the top. Let cool for 20 minutes.

Frosting: Mix together all frosting ingredients and blend at low speed. Mix until smooth. Stir in ½ walnuts. Spread on top of the cake and swirl. Sprinkle remaining nuts on top.
