Western Omlette

Ingredients

  • 1 tsp. canola oil
  • 1 cup chopped red and green pepper
  • 1 small green onion, chopped
  • 1 egg
  • 2 slices back bacon, lean deli ham or turkey breast, chopped
  • pinch cayenne pepper or dash of hot sauce

Preparation

Step 1

In small, non-stick pan, heat oil over med-high heat. Add pepper and onion and saute 5 mins. Transfer to a plate. In bowl, stir together egg, bacon, and cayenne pepper or hot sauce. Pour into pan and cook about 5 mins., lifting edges to allow uncooked egg to run underneath, until almost set. Sprinkle sauteed veggies over half of the omlette. Using spatula, fold over other half and cook 1 min.
