    eggs

  • 2

    cups sugar

  • 1

    cup oil

  • 2

    tsp vanilla

  • 2

    cups grated succhini

  • 1

    tsp salt

  • 1

    tsp baking soda

  • 1/2

    tsp baking powder

  • 2

    tsp cinnamon

  • 3

    cups flour

  • 1

    cup nuts (optional)

Directions

Beat eggs until light and foamy. Add sugar, oil, vanilla, then zucchini. Beat well, then add dry ingredients. Pour into two greased and floured 9x5" loaf pans or 4 small loaf pans. Bake at 350 degrees for 50-60 minutes. Cool 10 minutes and remove from pans. Freezes well.
