TOMATO SOUP

Ingredients

  • 1/4 cup minced onions
  • 3 tablespoons butter or margarine, melted
  • 3 tablespoons all purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup milk
  • 4 cups tomato juice
  • 1 small bay leaf
  • 2 teaspoons chopped chives

Preparation

Step 1

Saute onions in a large saucepan, until tender. Add flour, salt and pepper stirring until smooth, Cook 1 minute stirring constantly. Gradually add milk and tomato juice, cook over medium heat, stirring constantly with wire whisk until thickened. Add bay leaf, simmer 1 minute. Remove bay leaf. Stir in chives. Makes 5-1/2 cups.
