Preparation

Step 1

In a food processor grind the Ritz crackers; remove. If using chunks of ham, grind them in the food processor; transfer ham to a very large mixing bowl. Add the ground beef, eggs, milk, salt & pepper, and cracker crumbs. Mix by hand like you are making a meatloaf. Be sure to mix the meats evenly. Then form into balls about 2" or so in diameter. Place in rows in a lightly greased cake pan. They can be right next to each other, as many as will fit in the pan. The recipe may require two pans depending on size. While forming the balls, prepare the sauce. In saucepan combine the 2 cans of tomato soup, vinegar, mustard, and brown sugar. Bring to simmer; simmer for a few mintues, or until the sugar dissolves. Use a laddle to pour sauce over each ham ball. Then once they are all covered on the tops and sides, then pour any remaining glaze over all. Bake at 350 degrees about 1 hour for smaller size ham balls, or to 1 1/2 hours, if you made larger ham balls. Spoon glaze over ham balls occasionally.
