Ingredients

  • 1/3 cup plus 1 Tablespoon shortening
  • 1 cup flour
  • 1/2 teaspoon salt
  • 2 or 3 Tablespoons cold water

Step 1

Cut shortening into flour and salt until particles are the size of small peas. Sprinle water, 1 Tablesppoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons of water can be added if necessary).

Gather pastry into a ball; shape into flattened round on floured board. Roll pastry 2 inches larger then inverted pie plate. Fold in quartes; unfold into plate, pressing firmly against bottom and side.

For baked pie shell - Prick bottowmand side thoroughly with fork. Bake at 475* until light brown, about 8 to 10 minutes; cool.
