Southwest White Chicken Chili

Yum! This was very good, and very easy! i'll be doubling the recipe next time so that I can have leftovers. Thanks for a keeper!

Ingredients
- 1/2 cup oil
- 1/2 cup flour
- 3 to 4 cans chicken broth or smoked chicken juice
- 2 cups great northern white beans
- 2 cups chicken, chopped
- 4 to 6 scallions
- 3 to 4 cans green chiles, chopped (preferably hot)
- 1/2 cup Monterey Jack, grated
- 1/2 cup sour cream
- 2 teaspoons garlic powder
- 1 tablespoon cumin
- 2 teaspoons chili powder
- 2 teaspoons mesquite seasoning
- Fresh cilantro, as desired

Step 1
Make a roux
Add broth and simmer until it thickens.
Add spices and blend in sour cream with grated cheese.
Add remaining ingredients.
Simmer for 1 hour and top with fresh cilantro. Enjoy!
