Kicky Kohlrabi Salad

Ingredients

  • 6 medum kohlrabi,pared & julienned
  • 1/4 cup rice wine vinegar
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil
  • 1 1/2 tsp. minced pared ginger root
  • 1/2 tsp. dried tarragon
  • 1/4 tsp. crushed red pepper flakes
  • dash salt
  • 1 small red onion, thinly sliced and seprated into rings
  • 1 Tbsp. toasted sesame seeds

Preparation

Step 1

In large saucepan, bring 2 quarts water to a boil; add kohlrabi and cook until tender-crisp, about 2 minutes. Drain; rinse under cold water. Transfer to large bowl.

To prepare dressing, in small bowl, combine remaining ingredients except onion and sesame seeds. Pour over kohlrabi; toss well to coat. Cover and refirigerate at least 2 hours.

To serve, place kohlrabie on serving platter; arrange ionion rings on top; springle with sesam seeds.
