New Potato Casserole

Ingredients

  • 12 medium new potatoes
  • salt & pepper
  • 16 slices crumbled bacon
  • 1/2 c. melted butter
  • 2 c. cheddar cheese
  • 1/4 c. parsley, chopped, for garnish

Preparation

Step 1

Wash and cube potatoes (don't peel). Cook in boiling water until barely tender. Drain and season to taste with salt and pepper. In a 2 qt. casserole place a layer of potatoes, half the bacon, half the butter, and half the cheese. Repeat layers. Heat at 350 for 20-30 minutes or until cheese is bubbly. Remove from oven and garnish with parsley.
