Chicken with Crab over Rice

  • 8oz. lump crab meat
  • 6 chicken breasts
  • salt and ground pepper
  • 1/4 cup butter, divided
  • 8oz. sliced crimini mushrooms
  • 1/2 cup minced green onion
  • 1 cup dry white wine
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 8oz. cream cheese, softened
  • cooked rice
  • ground black pepper

Step 1

(1) Preheat oven to 350. Spray a 9x13 baking dish with
oil. Sprinkle crab meat evenly over dish. (2) Season
chicken and saute in large skillet in 2 Tbs. of butter
over med.-high heat for 4 to5 min. per side until
brown and place over crab meat. (3) Melt 2 Tbs. butter
over med.-high heat and cook mushrooms and gr.
onions until tender. Add wine and cook 5 to 6 min. or
until reduced by half. Stir in broth and cream, and
cook for 10 min. or until slightly thickened. Add cr.
cheese, stirring until melted. Season. (4) Pour over
chicken and bake 25 - 30 min. Serve over rice
seasoning with gr. pepper.
