Warm Bread Salad with Tomatoes

Ingredients

  • 1/2 cup olive oil
  • 6 cloves garlic, crushed but kept whole
  • 4 cups torn baguette pieces
  • 1 cup 1/2-inch-diced onion
  • 4 cups 1/2-inch-diced tomatoes, divided
  • 3 TBSP red wine vinegar
  • 1 bunch fresh basil, stemmed
  • 1 TBSP capers
  • Kosher salt
  • Black pepper

Preparation

Step 1

In a large saute pan, heat olive oil over medium-high heat. Add garlic and cook til fragrant, 1 to 2 minutes. Add baguette pieces and saute til golden brown, 4 to 5 minutes. Lower heat to medium-low, add onion and saute 1 minute, then add 2 cups tomatoes. Add vinegar and remove from heat. Add basil, capers, and remaining tomatoes and toss to combine. Season with salt and pepper to taste.
