Oven Potato Slices

Ingredients

  • 5 unpeeled medium red potatoes (about 2 lbs. , of more or less uniform size, if possible), washed and cut into 1/4" slices
  • 3-4 T unsalted butter
  • Kosher salt
  • Black Pepper
  • Rosemary, optional

Preparation

Step 1

Preheat oven to 425.

Melt the butter and pour half of it into a large, shallow laking pan, making sure it covers the entire bottom. Layer the potato slices in rows, with each slice slightly overlapping the next. Sprinkle with salt, pepper, and rosemary, if desired. Drizzle the remaining butter and bake, uncovered, for 45 minutes, or until the potatoes begin to crisp and turn golden.
