PAN SPICED TENDERLOIN WITH HONEY AND PEARS

This is an easy weeknight meal. If you don't have a spice grinder or coffee grinder, my SO can give you some advice -- put the fennel seeds in a heavy duty freezer bag and beat them with a hammer!
Ingredients
- 1.5 lb pork tenderloin
- 2 Asian pears, sliced thin
- 2 slices thick bacon, cut into 1 inch cubes
- 1 Tbs chopped garlic
- 1 Tbs fennel seeds, ground
- 1/8 tsp Allspice
- 1/2 tsp Thyme Leaves
- 1/8 tsp black pepper
- 1/2 tsp kosher salt
- 1.5 Tbs honey
- 3/4 Cup chicken broth

Step 1
Slice tenderloin into 1.5 inch rounds, lay flat and set aside.
Add fennel, allspice, thyme, kosher salt and pepper in a small bowl and stir to mix in. Sprinkle mixture onto slices of tenderlion and press mixture in on both sides.
In a large skillet, fry bacon on medium-hi until crisp. Remove bacon to a paper towel lined plate. Reduce heat to medium and add tenderloin to skillet. Cook on on both sides approx 4 minutes. Remove meat to a plate and cover with foil. Add chicken broth, garlic and pears to pan and cook until pears soften, approx 4-5 min. Stir in honey just until incorporated. Serve mixture on top of tenderloin.
