PAN SPICED TENDERLOIN WITH HONEY AND PEARS

This is an easy weeknight meal. If you don't have a spice grinder or coffee grinder, my SO can give you some advice -- put the fennel seeds in a heavy duty freezer bag and beat them with a hammer!

Ingredients

  • 1.5

    lb pork tenderloin

  • 2

    Asian pears, sliced thin

  • 2

    slices thick bacon, cut into 1 inch cubes

  • 1

    Tbs chopped garlic

  • 1

    Tbs fennel seeds, ground

  • 1/8

    tsp Allspice

  • 1/2

    tsp Thyme Leaves

  • 1/8

    tsp black pepper

  • 1/2

    tsp kosher salt

  • 1.5

    Tbs honey

  • 3/4

    Cup chicken broth

Directions

Slice tenderloin into 1.5 inch rounds, lay flat and set aside. Add fennel, allspice, thyme, kosher salt and pepper in a small bowl and stir to mix in. Sprinkle mixture onto slices of tenderlion and press mixture in on both sides. In a large skillet, fry bacon on medium-hi until crisp. Remove bacon to a paper towel lined plate. Reduce heat to medium and add tenderloin to skillet. Cook on on both sides approx 4 minutes. Remove meat to a plate and cover with foil. Add chicken broth, garlic and pears to pan and cook until pears soften, approx 4-5 min. Stir in honey just until incorporated. Serve mixture on top of tenderloin.
