Ingredients

  • 6 bacon slices choped
  • 2 pounds of stew meat
  • 1 onion
  • 6 small red potatoes quartered
  • 2 large carrots
  • 1 can of beef broth
  • 1 cup dry red wine
  • 2 tab tomato paste
  • 1 tab fresh thyme leaves
  • 1 teas salt
  • 1/4 teas freshly ground black pepper
  • 3 garlic cloves minced
  • 2 tab cornstarch
  • 2 teasp cold water

Preparation

Step 1

Cook bacon in a large skillet over med-high heat until crisp. Remove bacon reserving drippings in the pan
Brown beef in batches in the bacon drippings until browned on all sidws.
Combine reserved bacon, beef, onions and the next 10 ingredients in a slow cooker. Cover and cook on low 7 hours
Whisk together cornstach and water, Stir into stew. Cover and cook on high for 1 hour.
Stir in the stew
