Ingredients

  • 3 lg. eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 c. grated, raw zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 3 tsp. cinnamon
  • 1 c. walnuts
  • 1/2 tsp. nutmeg (ground or fresh)

Preparation

Step 1

Preheat oven 350 degrees.
Beat eggs until light & foamy. (10 mins. on high speed)
Add sugar & beat 10 mins.
Add oil & beat 10 mins.
Add zucchini, vanilla & mix lightly but well. Combine flour, salt, baking soda, baking powder, cinnamon & nutmeg,
add to the egg-zucchini mixture. Stir until well blended, add nuts, & pour into 2 9x5x3in loaf pans. (butter pans)

Cook for 1 hour. (if using mini-loaf pans bake for 25-35 mins.
No more than 1/2 full when you fill pans.
