Lemon Poppy Seed Cupcakes

Ingredients

  • 2 1/2 cups flour
  • 2 tbs. poppy seeds
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 4 ounces cream cheese, softened
  • 1 stic butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1 tbs. grated lemon peel

Preparation

Step 1

Preheat oven to 350 degrees.

Whisk together the flour, poppy seeds, baking powder, baking soda, and salt in a bowl. In another bowl cream the cheese, butter, and sugar until light and fluffy, about 3 minutes.

Add the eggs, one at a time, beating well after each addition. Reduce speed to low and add the flour mixture alternately with the milk in batches, beginning and ending with flour and beat just until blended. Stir in the lemon peel.

Bake until godlen about 15-20 minutes.
