Coconut Pizzele

Ingredients

  • 1 ¾ cups flour
  • 1 tbs. baking powder
  • 3 eggs
  • ¾ cup sugar
  • 1/3 cup butter, melted
  • 2 tsp. vanilla
  • ¾ cup faked coconut, toasted and chopped

Preparation

Step 1

Stir together the flour and baking powder. Beat eggs on high for 4 minutes (mixture should be light and thick). On medium speed gradually beat in the sugar. Beat in butter and vanilla. Add the flour mix on low and then fold in the coconut.
