1 package goat cheese/Chevre
Mix 1 T each of thyme and chives
Beat 1 egg and 1 T Dijon mustard together
Melba toast crumbs
Cut goat cheese in1” rounds. Shape into a ball and flatten slightly. Dip rounds into thyme and chive mixture. Then into the egg mixture and finally coat with the melba toast crumbs. Place in freezer for 30 minutes. Brush with olive oil and bake on top rack in oven at 475 for 7-9 minutes. Drain. Place mixed greens on salad plates and put 1 –2 goat cheese rounds on top. Drizzle with oil and balsamic vinegar dressing or any vinaigrette dressing.
