Baked Goat Cheese Salad

  • 1 package goat cheese/Chevre

  • Mix 1 T each of thyme and chives

  • Beat 1 egg and 1 T Dijon mustard together

  • Melba toast crumbs

  • Olive oil


Cut goat cheese in1ā€ rounds. Shape into a ball and flatten slightly. Dip rounds into thyme and chive mixture. Then into the egg mixture and finally coat with the melba toast crumbs. Place in freezer for 30 minutes. Brush with olive oil and bake on top rack in oven at 475 for 7-9 minutes. Drain. Place mixed greens on salad plates and put 1 ā€“2 goat cheese rounds on top. Drizzle with oil and balsamic vinegar dressing or any vinaigrette dressing.
