Ingredients

  • 2 eggs, beaten
  • 1 cup eggnog
  • 2 tsps rum extract
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 cup butter, softened
  • 2 1/4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp nutmeg

Step 1

Blend together eggs, eggnog, rum extract, sugar, vanilla, and butter. Add dry ingredients just enough to moisten; pour into greased and floured 9x5 loaf pan or three 3x5 loaf pans. Bake bread in large pan at 350 degrees for 40-60 minutes or until toothpick comes out clean. Bake smaller pans for 35-40 minutes. Cool 10 minutes and remove from pan. Cool completely and wrap tightly to store in refrigerator.
