Spaghetti Squash ala Greek

Ingredients

  • Spaghetti Squash
  • Sun-dried Tomatoes
  • Sliced Olives
  • Meatballs (or chunks chicken breast, etc)
  • Olive Oil
  • Spices to taste
  • Feta Cheese (optional)

Preparation

Step 1

Mix all ingredients together and eat hot or cold.

(I cooked a Spaghetti Squash, whole, in the oven for 50 minutes at 350degrees - more/less depending on size ...I had Sun-dried Tomatoes in jar so I just drained the oil...opened a can of Sliced Olives...Used leftover Meatballs from the night before...poured a little EVOO and some garlic/oregano/basil to taste....sprinkled a little bit of Feta Cheese and voila!)
