Watercress, Pear and Pomegranate Salad

Ingredients

  • 1/4 cup olive oil
  • 3 tbsp pomegranate juice
  • 2 tbsp white wine vinegar
  • 2 tbsp walnut oil
  • 1/2 tsp Dijon mustard
  • 1 tsp honey
  • 2 large bunches watercress
  • 1 head bib lettuce
  • 2 firm but ripe pears, halved, cored, each half cut into 6 wedges
  • 1/2 cup crumbled feta cheese (goat cheese?)
  • 1/2 cup fresh pomegranate seeds

Preparation

Step 1

Whisk first 6 ingredients in small bowl. Season with salt and pepper.

Combine greens in bowl. Pour all but 2 tbsp dressing over, toss to coat.

Divide greens among 6 plates. Arrange 4 pear wedges in pattern on each plate.

Drizzle 2 tbsp dressing over pears. Sprinkle with cheese and pomegranate seeds.
