Watercress, Pear and Pomegranate Salad

Ingredients
- 1/4 cup olive oil
- 3 tbsp pomegranate juice
- 2 tbsp white wine vinegar
- 2 tbsp walnut oil
- 1/2 tsp Dijon mustard
- 1 tsp honey
- 2 large bunches watercress
- 1 head bib lettuce
- 2 firm but ripe pears, halved, cored, each half cut into 6 wedges
- 1/2 cup crumbled feta cheese (goat cheese?)
- 1/2 cup fresh pomegranate seeds

Preparation
Step 1
Whisk first 6 ingredients in small bowl. Season with salt and pepper.
Combine greens in bowl. Pour all but 2 tbsp dressing over, toss to coat.
Divide greens among 6 plates. Arrange 4 pear wedges in pattern on each plate.
Drizzle 2 tbsp dressing over pears. Sprinkle with cheese and pomegranate seeds.
