Boiled Dijon Chicken Breast
- 1/3 cup reduced fat mayo
- 2 tab. grated Parmesan cheese
- 1 tab. Dijon mustard
- 1/4 teas. each of garlic powder and pepper
- 4 skinned and boned chicken breast halves
Heat broiler. Line a broiler pan rack with foil.
Mix all ingredients except chicken
Place chicken smooth side down on lined racks. Brush with 1/2 cup mayo mix.
Broil 4-6 inches from heat source 6 minutes. Turn breast over and brush with remaining mayo mix. Broil 6 minutes longer until chicken is cooked and lightly brown.
