Ingredients

  • 2 1/2 lb whole trout
  • 2 cups soft bread crumbs
  • 1 small onion finely chopped
  • 4 tbsp melted butter
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp parsley
  • 1 tbsp piinemto
  • 1 egg beaten

Wash the fish under cold water and drain well. Mix bread crumbs, onion, butter, salt, pepper, parsley, piinemto, and egg to make stuffing. Spoon half,the filling in each fish. Pull fish together and insert wooden toothpicks or short skewers every inch. Lace in between the toothpicks with heavy string, pulling fish together tightly. Brush fish with oil and place in hinged basket. Insert spit rod and place on rotisserie over medium heat with the lid up slightly. Cook for 25 minutes or u til fish flakes easily with a fork. Garnish with lemon wedges.
