Spinach, Ham and Cheese Strata

  • 1 loaf sourdough bread
  • 1 pkg (10 oz/300 g)frozen spinach, thawed and squeezed dry
  • 6 green onions, thinly sliced
  • 1-1/2 cups shredded Swiss cheese
  • 1 cup diced ham or smoked turkey
  • 8 eggs
  • 2-1/2 cups milk
  • 1 tbsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper

Step 1

Cut bread into 1-inch (2.5 cm) cubes to make about 12 cups (3 L). In large bowl, stir together bread, spinach, onions, cheese and ham. Spoon into greased 13- x 9-inch (3 L) glass baking dish.

In bowl, whisk together eggs, milk, mustard, salt and pepper; pour over bread mixture and let stand for 20 minutes. (Make-ahead: Cover and refrigerate for up to 24 hours.)

Bake in 375°F (190°C) oven until puffed and golden, about 45 minutes.
