Ingredients

  • 1 cup chopped fresh spinach
  • 1 8-oz carton dairy sour cream
  • 1 8-oz carton plain fat free yogurt
  • 1/4 cup snipped fresh mint
  • 1/4 cup finely chopped peanuts
  • 1/4 cup creamy peanut butter
  • 1 Tbsp honey
  • 1 Tbsp soy sauce
  • 1-2 tsp crushed red pepper

Step 1

1. In a medium bowl combine the spinach, sour cream, and yogurt. Stir in mint, peanuts, peanut butter, honey, soy sauce, and crushed red pepper.

2. Cover and chill for 2 to 24 hours. Serve with baby carrots or other vegetable dippers.
