Bisquick Cinnamon Walnut Coffee Cake
By Addie
Using Bisquick (an all-purpose baking mix made from flour, partially hydrogenated oil, leavening, and buttermilk), make preparation a snap. I found the dough extremely difficult to work with, so I ended up making a loaf instead of the ring described in the instructions below.
Ingredients
- 1 cup walnuts - chopped
- 6 tablespoons sugar
- 2 teaspoons cinnamon
- 3 cups Bisquick baking mix
- 3/4 cup buttermilk
- 1 large egg
- 4 tablespoons butter - at room temperature
- 3/4 cup confectioner's sugar
- 5 tablespoons milk
- 1 teaspoon vanilla
Preparation
Step 1
Preheat oven to 400 degrees F.
Mix walnuts, 4 tablespoons sugar and cinnamon in a small bowl. Mix Bisquick and 2 tablespoons sugar in large bowl; add buttermilk and egg and stir until sticky dough forms.
Turn dough out onto work surface sprinkled with Bisquick; knead to 6 to 8 turns until smooth. Roll out dough to 12 x 9 rectangle. Spread with 2 tablespoons butter, then sprinkle with walnut-sugar mixture, leaving 1 inch border on all sides. Starting at 1 long side. roll up jelly roll style. Press roll to flatten slightly.
Transfer seam side down, to ungreased baking sheet.Using a sharp knife, make crosswise cuts 3/4 of the way into roll along 1 long side, spacing cuts 1 inch apart. Shape roll into ring, with cuts facing outward; pinch ends together to seal. Turn cut slices to lie almost on their sides.
Bake cake until golden brown and baked through (25 minutes). Let cool (10 minutes).
In a small bowl, microwave 2 tablespoons butter until melted (30 seconds). Stir in confectioner's sugar and enough milk to make a thick icing. Drizzle icing over warm cake. Serve.

I picked this recipe because I didn't have any yogurt or sour cream in the house-- It was wonderful.. the church ladies loved it! I added a package of vanilla pudding mix, 5 fresh eggs all different sizes, a little extra butter, and half the baking powder-- I don't know if it was the pudding but it was almost too moist;-))) Will bake again!
Instructions difficult to understand when forming the ring on baking sheet. Not sure if we did it right. It looked like a blob coming out of the oven.
This was HEAVY, HARD and DRY and I followed the recipe exactly. I think using the Bisquick makes it dense like BISCUITS. I wouldn't make this again. Flavor was good..but cakey-ness was too dense and dry. UGH.
This is just about the worst recipe for coffee cake that I have ever made. I would not make this again on a bet.
It was quick, easy, and yummy! Very handy!
Quick and easy like it is supposed to be for a basically lazy cook.
My family love's this and when I have them I add a minced up apple to the walnut mixture. Truely wonderful
I tried this because it looked and was so easy. My husband and son loved it. I thought it tasted like biscuits. It was good and I would make it again for them, but I've had better coffee cakes.
