Ingredients
- 1 cup sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (16-ounce) package frozen mixed vegetables
- 3/4 pound deli chicken or turkey breast, cubed
- 1 (10-1/2-ounce) can condensed cream of chicken soup
- 3 English muffins, split in half
Preparation
Step 1
In a small bowl, combine sour cream, salt, and pepper; set aside.
In a large saucepan, combine mixed vegetables, chicken, and soup over medium-high heat.
Cook 4 to 5 minutes, stirring occasionally, until vegetables are crisp-tender. Reduce heat to medium and add sour cream mixture. Cook an additional 2 to 3 minutes, until mixture comes to a boil and starts to thicken, stirring constantly.
Toast English muffins, then spoon mixture over them and serve immediately.
