Pasta with Mushrooms and Speck

Ingredients

  • 4 oz. speck, in a few thick slices
  • 1 tbs. oil
  • 8 oz. white mushrooms, thinly sliced
  • 1 cup heavy cream
  • Salt and pepper
  • 14 oz. tagliatelle
  • 2 tbs. parsley, chopped

Preparation

Step 1

Slice the speck into narrow strips and cut into 1 inch pieces. Warm the oil, add the speck, and sauté until heated through, about 2 – 3 minutes. Add the mushrooms and sauté until slightly softened; 4 – 5 minutes. Add cream and season. Simmer over medium heat until sauce thickens, 8 – 10 minutes. Cook pasta and toss with the sauce, sprinkle on parsley and serve.
