Aloo Bhindi

Aloo bhindi is a good combination & it is very tasty & quite easy to prepare.

Ingredients

  • 250 grms aloo (potato)
  • 250 grms bhindi (lady finger)
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp cumin powder
  • 1/2 tsp ajwain (carom seeds)
  • 1 tsp dry mango powder
  • 1 tsp coriander leaves
  • 2 tsp oil
  • Salt to taste

Preparation

Step 1

1. Wash, pat, dry & cut bhindi (lady finger) into 1/2 inch pieces. Half boil
potatoes, peel & cut into cubes.

2. Heat oil in a kadai & add the cumin & ajwain (carom seeds) . Fry for a
minute, then add the bhindi (lady finger) & potato.

3. Mix in the salt, turmeric, chilli powder & the dry mango powder.

4. Lower the heat & cook covered till the vegetables are tender.

5. Garnish with coriander leaves & serve.
