Prickly Pear Cactus Jelly

Ingredients
- 3 cups prickly pear juice
- 1/4 cup fresh squeezed lime juice
- 4 cups sugar
- 1 pack liquid pectin
Preparation
Step 1
Add all ingredients except the pectin and bring to a boil. Add the pectin and return to a rolling boil. Time for 1 1/2 minutes. Watch for jelling signs after 1 minute.
When ready, pour into sterile jars, seal and invert for 2 minutes only.
