Ingredients
- 1 small watermelon
- 1 cup sugar
- Juice of ½ a lemon, strained
- 1 lime, peel on, sliced thinly
- 1 peach, skin on, cut into thin wedges
Preparation
Step 1
Cut the watermelon in half. Scoot out flesh from on t of the 2 halves, leaving a one inch border of flesh clinging to the rind, reserve the remaining half.
Remove the seeds from the flesh, weigh 12 oz of the watermelon flesh, blend with sugar, lemon juice, and 1 ½ cups plus 2 tbs. water in a blender until perfectly smooth. Pour mixture in an ice cream machine and process 30 minutes. Place sorbet into emptied watermelon half filling it over the brim, with scoops from an ice cream scooper. Decorate with slices of lime and peach.
