Mini Cheesecakes

Ingredients

  • 2 8 oz cream cheese
  • 3/4 cup white sugar
  • 2 eggs
  • 1 Tbs vanilla
  • vanilla wafers

Preparation

Step 1

Bring cream cheese to room temperature

Mix above ingredients with electric mixer until creamy

Put a vanilla wafer in small muffin tin liner, right side up

Fill each liner 3/4 full with mixture

Bake at 300 degrees

They will look like they are not done, but touch the top and if they feel set, they are ready
